Travis Bear Chocolate Cake

My most requested recipe, and one I have been making since the mid-1970’s. This will make either one 9 by 13 sheet cake or two 8 or 9 inch round cake pans. I named it after my husband, because the changes made to it were made for him.

Ingredients Dry (Cake)

  • 1 3/4 cups flour (plus about one tablespoon for cooking dish)
  • 1 cup cocoa powder
  • 1 1/2 teaspoons of baking powder
  • 1 1/2 teaspoons of baking soda
  • 1 teaspoon of salt
  • 1 cup of granulated sugar

Ingredients Wet (Cake)

  • 1 cup of milk
  • 1/2 cup of vegetable oil (plus about one tablespoon for cooking dish)
  • 1 cup of hot black coffee
  • 2 eggs
  • 1 tablespoon vanilla extract

BONUS: To make the cake even more rich and moist, add half a cup of chocolate chips to the batter.


  • 2 cups powdered sugar
  • 1 tablespoon vanilla extract
  • 2 tablespoons cocoa powder
  • 2 sticks (1/2 pound) butter

(For more frosting, and you will probably want more frosting, just double this part.)

Directions (Cake):

  1. Start by brewing coffee, regular strength, either in a French press or regular coffeemaker.
  2. Preheat over to 350 degrees F.
  3. Mix dry ingredients.
  4. Add wet ingredients one at a time.
  5. Add coffee and mix all ingredients together. Bater will appear runny; this is the desired outcome.
  6. Lightly grease cooking pan with oil and lightly dust with flour.
  7. Pour batter into cooking pans.
  8. Bake for approximately 25-30 minutes. Use a toothpick or knife to test center of cake. You can tell it is almost done as top of cake will crack slightly.
  9. Allow cake to cool completely. You can put it in the refrigerator for about an hour to speed this part.

Directions (Frosting):

  1. Allow butter to warm to room temperature. Do not let the butter to melt completely. if it does, place in refrigerator until slightly firm.
  2. Add powdered sugar one cup at a time.
  3. Add vanilla extract.
  4. Add cocoa powder.

Stir all ingredients together until completely mixed and frosting is smooth.

Frost completely cooled cake. it will be slightly dark in chocolate flavor, and the coffee will add a distinct, rich taste. The frosting will be slightly sweet, and compliments the cake layers nicely.
